Southwest style chicken salad that is high in protein and fiber. Goes great in a wrap, on top of lettuce with some salsa, or as a dip with corn chips!

Recipe Ingredients for Chicken and Black Bean Salad

1/2 c. dry black beans
11 oz. canned chicken
1 avocado
1/2 c. fresh cilantro
1/2 c. reduced fat sour cream
1/4 c. green onions, chopped
2 tbsp. lime juice
1 cumin to taste
1 chili powder to taste
1 salt to taste

Recipe Directions for Chicken and Black Bean Salad

  1. Put beans in rice cooker with water and spices of choice. Let cook for about 1 hour or until tender. (If you don't want to do this, you can substitute a can of black beans, drained and rinsed, instead.)

  2. Drain can of chicken, or use diced cooked chicken breast.

  3. Chop green onions and cilantro. Dice avocado.

  4. In large bowl, add all ingredients and stir until fully mixed.
