Recipe Ingredients for Chicken and Black Bean Enchiladas

2 tsp olive oil
1/2 cup chopped onion
2 cloves garlic
1 pound boneless, skinless chicken breasts
15 oz Bush's black beans
4 oz green chilies
1/2 cup salsa
2 tbs cilantro
8 corn tortillas
1 cup cheddar cheese

Recipe Directions for Chicken and Black Bean Enchiladas

Saute garlic and onion. Add chopped chicken breast and cook 5 min or until done and brown. Add beans, chilies, salsa, cilantro and simmer 15 min. Fill tortillas with mixture, roll them up, sprinkle with cheese, and bake 15 min.
