Delicious enchiladas that freeze well.

Recipe Ingredients for Chicken and Black Bean Enchiladas

1 lb boneless, skinless chicken breasts
3 ounces bacon
2 cloves garlic
24 oz picante sauce
1 cups black beans
1 large red bell pepper
1 tsp. cumin
1/4 teaspoon salt
1/2 cup chopped green onions
12 (6") flour tortillas
9 oz shredded cheese
1 large avocado
2 small tomatoes
12 tbs Sour cream
6 cup Shredded iceberg lettuce for garnish

Recipe Directions for Chicken and Black Bean Enchiladas

  1. Cut chicken into short, thin strips. Cook bacon in skillet until crisp. Remove with slotted spoon and drain on paper towels. Let cool, then crumble.*

  2. Cook chicken and garlic in bacon drippings over medium-high heat until chicken is no longer pink. Stir in 1/2 cup picante sauce, beans with their juice, red pepper, cumin and salt. Simmer until thickened, stirring occasionally. Stir in green onions and bacon, then remove from heat.

  3. Spoon a heaping 1/4 cup of mixture down the middle of each tortilla shell and top with 2 tbs cheese. Roll up; place seam side down in 2 8"x8" lightly greased aluminum tins (or glass casserole dishes. If cooking all at once, then use a 9"x11" pan.). Spoon remaining picante sauce over enchiladas.

  4. Top with remaining cheese, cover with foil and store in freezer.

  5. To cook, thaw completely in the refrigerator.

  6. Cook in an oven preheated to 350 degrees for 30 minutes or until heated through. Cheese should be bubbly. Top with sour cream, chopped avocado and lettuce.
