Like the beef, but with chicken instead

Recipe Ingredients for Chicken and Black Bean Enchilada bake

2 cups chopped boneless skinless chicken breasts
1 tbsp vegetable oil
28 g g McCormick Chicken Taco seasoning mix
8 flour tortillas
453 g g Kroger Chipotle enchilada sauce
8 serving Kroger mild cheddar jack (shredded)
850 g Kroger Black Beans

Recipe Directions for Chicken and Black Bean Enchilada bake

  1. Cook chicken in oil over medium heat until cooked through

  2. Add taco seasoning and 1/2 cup water, follow instructions on packet

  3. Pour small amount of enchilada sauce in bottom of 11x13 pan, line with half of tortillas

  4. Layer black beans and chicken on top of tortillas, cover with half of cheese and remaining tortillas

  5. Pour remaining sauce over tortillas

  6. Bake 15 minutes at 375 degrees, then top with remaining cheese and bake 5 more minutes, until cheese on top is melted.
