A great alternative to ground beef base chili.

Recipe Ingredients for Chicken & Black Bean Chili - Slow Cooker

2 lbs boneless skinless chicken breast, cubed into 1/2" cubes
2 cloves garlic
2 cups mild salsa
1 1/2 cup frozen corn
1 tbsp vegitable oil
1 medium onion, diced
19 oz chopped tomatoes with juice
19 oz black beans
1 tbsp chili powder
1/2 tsp salt

Recipe Directions for Chicken & Black Bean Chili - Slow Cooker

  1. In a large non-stick skillet, heat oil over medium heat. Add chicken and cook, stirring frequently, until chicken is no longer pink. With a slotted spoon, transfer to a slow cooker.

  2. Add onion, garlic, tomatoes (with juice), corn, black beans, salsa, chili powder and salt; stir to combine.

  3. Cover and cook on low for 4 to 6 hours or on hi fo 2 to 3 hours, until hot and bubbling.

  4. Garnish with fresh tomatoes and jalapeno peppers to taste.
