Lots of veggies and hearty black beans and barley. very satisfying. Freezes well and you can easily reduce the servings by reducing the water, black beans and barley. Add salt and pepper to taste, I use homemade vegetable stock instead of water to make it more complex.

Recipe Ingredients for Chicken, Black Bean and Barley soup

2 medium onions
3 carrots
7 celery stalks
2 teaspoons thyme
1 tablespoon olive oil
2 cups chopped mushrooms
1 gallon water
1 pound chicken
3 cups black beans
1 cup barley

Recipe Directions for Chicken, Black Bean and Barley soup

  1. Saute first 5 ingredients on medium heat until bright and beginning to soften.

  2. Add next 3 ingredients, bring to boil.

  3. Add chopped chicken. Return to boil.

  4. Add beans and barley. Return to boil.

  5. Reduce heat to low and simmer until barley is tender, about 30 minutes.
