Brown rice with spicy curried chicken, beets, and veggies

Recipe Ingredients for Chicken and Beets with Curry!

2 cup chicken broth
1 1/2 cup chicken thighs
2 cup Beets, Harvard
20 pieces Whole Okra
1 1/2 cup frozen brussels sprouts
1 1/2 cup frozen spinach
1 onion
1 tbsp garlic
2 tbsp Sriracha Chili Sauce
2 1/2 cups brown rice
2 tbsp olive oil

Recipe Directions for Chicken and Beets with Curry!

  1. Start your rice in a rice cooker.

  2. Cook onions in olive oil.

  3. Chop chicken and add to pot.

  4. Add 1 tablespoon curry or to taste.

  5. Add other spices as you like, including garlic and sriracha (I like mine HOT!)

  6. Once combined and the chicken is mostly cooked through, add frozen vegetables and chicken broth.

  7. Add 1 can beets (chopped) plus water from the beets, and stir.

  8. Bring to a boil (the okra will thicken the sauce) and let simmer.

  9. Serve over rice.
