Recipe Ingredients for Chicken with beans and winter vegetables

1 lb boneless skinless thighs
30 oz cannellini beans
2 T olive oil
1 T butter
1 large onion
1 lb carrots
1 lb potatoes
1 lb parsnips
1 lb butternut squash
14 1/2 oz ready cut tomatoes
1 c vegetable broth
4 T fresh rosemary sprigs
1 oz 2 dried bay leaves
1 t salt
1/4 t pepper

Recipe Directions for Chicken with beans and winter vegetables

  1. brown chicken in a large pot with 1 T olive oil and butter. Set aside.

  2. Saute onions in chicken pot 5 mins until transluscent.

  3. Add 1 T olive oil and vegetables. Saute 3 mins.

  4. Place beans in bottom of soaked clay pot followed by veggies and chicken on top with rosemary and bay leaves.

  5. Bake in 425F oven for 30 mins, turn temp down to 325F for another 30 mins or until veggies are done.
