Chicken, Beans and Rice - Excellent post workout mean. Lots of carbs, fiber and protein.

Recipe Ingredients for Chicken, Beans and Rice

1 cup rice
1 tbsp olive oil
1 1/2 cups chicken broth
1 lb chicken breast
15 oz black beans

Recipe Directions for Chicken, Beans and Rice

  1. Cook rice as directed substituting chicken broth for water

  2. Broil or Bake Chicken Breast and cut into bite size pieces

  3. Drain Black Beans

  4. When rice is finished, add Chicken Breast and Beans

  5. Mix and serve.

  6. Add salt, pepper and tabasco as desired
