Mixed beans in place of black beans

Recipe Ingredients for Chicken and Bean Soup

1 lb. black beans
8 cups Fat Free Low Sodium Chicken Broth
1 lb. chicken breast, skinless boneless
2 tablespoons Olive Oil
1 red bell pepper
1 green bell pepper
1 yellow onion
1 potato
14 oz. chopped tomato
8 oz. tomato paste
4 cloves garlic

Recipe Directions for Chicken and Bean Soup

  1. Soak Beans Overnight

  2. Place [all] ingredients in slow cooker [except see below]

  3. Optional: Pan fry sausage and onion to brown and then place in slow cooker with remaining ingredients

  4. Place slow cooker on low and cook throughout day

  5. Optional: Bring to a boil and then simmer for 2-3 hours until thoroughly cooked
