Chicken, bean & rice salad - a great lunch but NOT suitable for freezing - it goes watery!

Recipe Ingredients for Chicken, bean & rice salad

7/8 cup rice
1 pint low fat chicken broth
1 tspn cumin
5 oz chicken breast
150 g flageolet beans
1/2 red onion, chopped
1 courgette, chopped
1 red pepper, chopped
2 scallions, chopped
4 tbsp lemon juice
4 oz mushrooms, sliced
1 clove garlic, crushed

Recipe Directions for Chicken, bean & rice salad

  1. Dust the chicken with the cumin, then dry fry in a grill pan. Cool.

  2. Meanwhile, cook the rice in the chicken broth until all water absorbed and rice is cooked. Cool the rice.

  3. Cook the mushrooms in water, with the garlic.

  4. Chop the chicken and add to the rice, along with all the copped vegetables, beans and lemon juice.

  5. Season.
