Chicken and Bean Creamed Soup Recipe

This hearty soup is a wonderful meal on a chilly day.

Recipe Ingredients for Chicken and Bean Creamed Soup

1 med onion, chopped
4 oz green chilies, diced
1/2 tbs Garlic salt
4 cups fat free chicken broth
30 oz navy beans
2 tbs cornstarch
1/2 cup cold water
2 tbs parsley, minced
2 cups chicken breast, cubed

Recipe Directions for Chicken and Bean Creamed Soup

  1. In a saucepan heat the onion, chilies, garlic, and 1/4 cup of water. When the onions are transparent add the brothand the beans.

  2. Bring to a boil then cover and simmer for 12-15 minutes.

  3. With a potato masher smash the beans and vegies until about half the beans are mashed.

  4. Stir the cornstarch and 1/4 cup of water together until it is smooth. Pour into the bean mix. Simmer for 2 minutes ( be sure to keep stirring)

  5. Add cooked chicken cubes and parsley.

  6. Cook for 5 more minutes.

  7. Makes 12 - 1/2 cup servings.
