Low cal recipe for chicken, oh so good in a whole wheat tortilla. You can add extra types of veggies.

Recipe Ingredients for Chicken and Basil Stir-Fry

7 serving (Best Choice) Chicken Tenderloins
1 tbsp cornstarch
1 pinch salt
1 pinch pepper
6 tsp vegetable oil
1/3 c chopped onion
1/2 c chopped green bell pepper
1 tbsp minced garlic
15 g Basil
15 g balsamic vinaigrette
1/4 c low-sodium soy sauce

Recipe Directions for Chicken and Basil Stir-Fry

  1. Pat chicken pieces dry with a paper towel.

  2. In a medium bowl, toss chicken with cornstarch until coated; season generously with salt and pepper.

  3. In a large nonstick skillet, heat 2 teaspoons of oil over medium-high heat.

  4. Cook half the chicken, turning once, until browned but not completely cooked through, 2 to 3 minutes total.

  5. Transfer to a plate.

  6. Repeat with another 2 teaspoons of oil and remaining chicken.

  7. Transfer chicken to plate.

  8. Set aside.

  9. Wipe out skillet with a paper towel.

  10. To skillet add remaining 2 teaspoons of oil, onion, and bell peppers

  11. Cook over medium-high heat, tossing often, until beginning to brown, about 3 minutes.

  12. Add garlic, cook until fragrant, about 1 minute.

  13. Add 1/4 cup water, balsamic vinaigrette, soy sauce and chicken to pan.

  14. Cook, tossing, until chicken is cooked through, about 1 minute.

  15. Remove from heat.

  16. Stir in basil leaves.

  17. Serve immediately, over rice or in a whole wheat tortilla.
