Chicken and Basil Pasta Recipe

Quick and easy dish that makes the most of your left over roast chicken

Recipe Ingredients for Chicken and Basil pasta

150 g penne pasta
1 onion, diced
1 tinned tomatoes, chopped
1 tsp sugar
2 tbsp basil
110 g chicken breast, cooked (leftover from roast works well)

Recipe Directions for Chicken and Basil pasta

  1. soften onion in a high sided non stick frying pan in a couple of sprays of 1 cal cooking spray.

  2. Whilst onions are softening put pasta into a pan of boilling water and cook as per packet instructions.

  3. Whilst pasta is cooking, add the tinned tomatoes to the pan with your onions.

  4. Add sugar basil and some ground black pepper to the tomato & oinion mix and simmer for 5 mins stiring occasionally.

  5. Break the cooked chicken into bite sized pieces and add to the tomato sauce and heat through.

  6. When the pasta is aprox 1 minute away from being cooked, remove from heat and drain, then add to the tomato sauce.

  7. Stir well and cook for a further 2 minutes, to finish cooking the pasta and infuse the flavors.

  8. Serve with a fresh green salad or vegatables of your choice. I you wish to bulk out the meal try sprinkling over grated parmesan and serving with crusty bread.
