Recipe Ingredients for Chicken Barley Vegetable Soup

1 serving VIGO EXTRA VIRGIN OLIVE OIL
1 cup, diced Celery
1 medium (2-1/2" dia) Onions
1.5 cup, chopped Carrots
8 serving Light and Fat Free Chicken Broth
2 cup, chopped Cabbage
0.75 cup Quick Barley
1 tsp, ground Basil, Dried
0.5 tsp Oregano, Ground
14.5 oz Diced Tomatoes
1.5 cup, chopped or diced Chicken, Breast, Meat Only

Recipe Directions for Chicken Barley Vegetable Soup

Saute onion, celery and carrots in olive oil for 3 minutes. Add minced garlic and saute chicken breast with vegetables. Add chicken broth, oregano, basil and diced tomatoes, simmer for 15 minutes. Add chopped cabbage and simmer until tender and translucent. Cook barley separately and add to soup during last five minutes of cooking time. Makes approximate 18.5 one cup servings.
