Chicken Barley Vegetable Soup Recipe

Makes 12 servings



I use the bones of 2 whole chickens (the skin, breasts, legs and any excess fat are removed first). This yeilds me about 3 cups shreaded chicken for the soup.

Recipe Ingredients for Chicken Barley Vegetable Soup

1 cup kohlrabi
1 turnip
1 rutabaga
2 carrot
2 small onion
2 stalk celery
1 cup celery root
10 garlic clove
3 cup chicken, white meat only
4 liter water, aprox
1 t dill
1/4 cup parsley
1/4 t black pepper, whole
1 cup barley

Recipe Directions for Chicken Barley Vegetable Soup

  1. Peel vegetables and place into pot with the chicken bones and spices. Add water to cover plus 2 cups.

  2. Cover and bring to boil. Reduce heat and simmer until chicken comes off bones easliy.

  3. Cool. Remove vegetables and meat to seperate dishes.

  4. Cut vegetables into bite sized pieces and return to pot.

  5. Pull meat of chicken from bones and shread before returning meat to pot.

  6. Add barley, cover and bring back to boil. Reduce heat and simmer until barley is well cooked.
