Recipe Ingredients for Chicken, Barley and vegetable with madras

127 g skinless chicken breast
75 g pearl barley
40 g onion
40 g courgette
62 g tomato
30 g celery
40 g leek
25 g broccoli
25 g cauliflower
40 g peas
35 g spinach
2 tsp madras curry powder
500 ml water

Recipe Directions for Chicken, Barley and vegetable with madras

  1. Chop all the vegetables and chicken into smallish bite size pieces.

  2. Sauté the onion and celery in a tsp of oil until slightly soft, then add the chicken and cook for 5 mins. Add the tomato and cook for another 3 mins then add the madras curry powder with the courgette and leek and cook for a further 3 mins.

  3. Add the barley and stir until the barley is covered and coloured with the vegetable juices. Add 250ml of hot water and stir until half evaporates, then add a further 125ml and simmer for 10 mins. covered.

  4. Stir and add another 125ml of hot water, the broccoli, cauliflower, peas and spinach. Cook covered until barley is soft to the bite.

  5. Serve and enjoy.
