This is an easy soup with lots of good vegetables in it.

Recipe Ingredients for Chicken Barley Soup

87 g. onion, chopped
1 tbsp. olive oil
491 g. chicken, cut in bite size pieces
1 clove garlic
3 1/4 c. chicken broth, less sodium
4 cups water
131 g. carrots
71 g. red pepper
42 g. jalapeno
78 g. cabbage
87 g. mushrooms
105 g. kale
117 g. barley, uncooked
1 tbsp. lemon juice

Recipe Directions for Chicken Barley Soup

Chop all vegetables and set beside a stock pot. Saute onion in oil, add chicken and brown, add broth, water and then carrots, red pepper and jalapeno. Cook until vegetables are almost tender. Add cabbage, mushrooms, kale. Boil barley separately in small pan in water until done. Simmer soup another 10 to 20 minutes until everything is cooked through. Add barley to remainder of soup. Add lemon juice before serving.
