Recipe Ingredients for Chicken Barley soup

2 chicken breast
2 chicken drumstick
2 cups cabbage
1 cup frozen chopped spinach
1 cup canned green beans
1 1/2 cup canned tomato
1 cup mushrooms
2 cups cooked barley
1/2 cup chopped green onion
1 cup chopped broccoli
4 tbs tomato paste
1 packet onion soup mix
1 cup chopped onion
1 cup vegetable broth
1 cup chopped zucchini
1/2 red bell pepper
1 cup sliced carrots
1 cup low fat sour cream
4 tbs minced garlic
1 tbs black pepper
1 tbs dry dill

Recipe Directions for Chicken Barley soup

  1. Cook your chicken however desired, or you can use already cooked leftovers. (I figure about 3 cups of chopped meat). I boil down a whole chicken, de-bone it and use half for the soup and half for sandwiches.

  2. Put the chicken and the rest of the ingredients in a big pot and cover with water. Boil until it is done.

  3. This soup is best the second day when it has had time to settle. You can also use a slow cooker to mix the flavors.
