I had a lot of leftover chicken from a whole roast chicken, so decided to make soup. Yay soup!!

Recipe Ingredients for Chicken Barley Soup

500 g chicken, cut up
6 cups water
2 carrots
2 stalks celery
1/2 cup barley
1/2 cup chopped onions
1 chicken bouillon cube (optional)
1 tsp. salt
1/2 tsp. parsley
1/2 tsp. pepper
1/2 tsp. dried sage
1 tsp olive oil
2 cloves garlic

Recipe Directions for Chicken Barley Soup

  1. This uses chicken from a deli whole roasted chicken. Pull meat off of bones and discard skin and bones. Chop chicken into bite size pieces.

  2. Chop veggies. Heat oil in bottom of large soup pan. Add onions and garlic and cook till translucent.

  3. Add water, celery, onion, carrots and barley to the pot. Add seasonings and chopped chicken pieces.

  4. Simmer 45 minutes.
