This is, in the words of Campbell?s, a ?soup that eats like a meal.? It is surprisingly low in fat (even more so if you use reduced-fat or fat-free chicken broth), and the carbohydrate level, while a bit high for Atkins dieters, should be low enough for most diabetics.

Recipe Ingredients for Chicken Barley Mushroom Soup

5 cup, diced Mushrooms, Portabella
4 tbsp Butter
4 cup, chopped Onions
3 cup, chopped Carrots
3 cup, diced Celery
3 clove Garlic
80 oz Natural Goodness Chicken Broth
2 tsp Salt, Table
2 tbsp Pepper, Black
0.25 tsp Nutmeg, Ground
1 cup Barley, Pearled
4 cup, chopped or diced Chicken, Meat Only, Roasted
2 tbsp Olive Oil
8 oz Sherry
1.5 cup Corn, Sweet, Yellow

Recipe Directions for Chicken Barley Mushroom Soup

  1. In a large stockpot, melt the butter.

  2. Add the onions, carrots, celery, and garlic, and sauté over medium-high heat until tender but not browned.

  3. Add the mushrooms and cook until just soft.

  4. Add the broth, seasonings, and barley. Increase heat to high, bring to a boil, then cover and reduce heat to low-medium. Simmer 2 hours or until barley is tender.

  5. Raise the heat to medium-high, add the chicken breast pieces, and cook just until chicken is cooked through, about 5-10 minutes.

  6. Remove from heat, stir in the optional dill and parsley, and serve.
