Great flavor of chili in 30 minutes. Low fat, high fiber and protein.

Recipe Ingredients for Chicken Barley Chili

14 1/2 oz can diced tomatoes, no salt added
16 oz can tomato sauce, low sodium
1 can broth, fat free, reduced sodium
1 cup barley, pearl
3 cups water
1 T Chili powder
1 t cumin
15 oz can black beans, drained and rinsed
15 oz can corn, low sodium, undrained
3 cups chicken breast, cooked, cut
1 onion, diced and sauteed in olive oil

Recipe Directions for Chicken Barley Chili

  1. In a 6 quart saucepan, combine first 7 ingredients

  2. Over high heat bring to a boil; cover and reduce heat to low.

  3. Simmer for 20 minutes, stirring occasionally.

  4. Add beans, corn and chicken; increase heat to high until chili comes to a boil.

  5. Cover and reduce heat to low.

  6. Simmer for another 5 minutes, or until barely is tender.

  7. If upon standing the chili becomes too thick add more chicken broth or water until chili is desired consistency. If desired, top with shredded cheese and sour cream.

  8. Serving=1 cup
