Hearty stew made with chicken, barley, and beer

Recipe Ingredients for Chicken, Barley, and Beer Stew

21 1/10 ounces chicken breast
4 medium carrots
8 ounces mushrooms
1 medium yellow onion
1 medium green bell pepper
1 1/2 cups pearled barley
14 1/2 ounces chicken broth
8 3/5 ounces yuca root
8 cloves garlic
1 tbsp olive oil
1 cup beer
2 cups water

Recipe Directions for Chicken, Barley, and Beer Stew

  1. Cut pockets into the chicken breasts using kitchen sheers or large knife. The pockets should go the length of the breast without punching through any of the sides.

  2. Mince the garlic and push equal amounts into the pockets in each breast.

  3. Add the olive oil to a heavy pan and brown the chicken breasts on med-high heat for 5-7 minutes.

  4. Meanwhile, chop all other ingredients into bite-sized chunks (except onion).

  5. When chicken is thoroughly browned, place chicken and chopped vegetables (except onion) in your crock-pot or dutch oven.

  6. Finely chop the onion and caramelize int he pan the chicken was cooked in. You want the onions to be completely and uniformly brown, but not blackened.

  7. Add onion to the crock pot.

  8. Pour in the barley, then the chicken stock, then the beer. Make sure the beer is one that you would drink by itself. Bad beer will make bad stew. Dark beers such as an Amber lager are good for this, but darker beers such as stouts can be over powering an should be avoided unless that is your preference.

  9. Add water so that everything is just barely covered.

  10. Stir to make sure all ingredients are combined. Add salt, pepper, and poultry seasoning to taste.

  11. Cook in a crock-pot on Low for 2-3 hours or braise in a dutch oven at 300F for 2-3 hours. Stew is ready when chicken and barley are thoroughly tender.
