Chicken and Barley Bake Recipe

This is a casserole for barley lovers.

Recipe Ingredients for Chicken and Barley Bake

1 tbsp butter, divided
1 tbsp vegetable oil, divided
1 cup onion, minced
2 cloves garlic, minced
1/2 cup celery, minced
2 sweet peppers, minced
1/2 cup dry white wine
28 ounce canned tomatoes, drained and chopped
1 cup barley, rinsed
3 cups chicken broth
18 ounce chicken, skinned and separated
1/4 cup milk
2 tbsp fresh parsley
3 scallions, minced
1 dash of salt
1 dash of pepper

Recipe Directions for Chicken and Barley Bake

  1. Heat one teaspoon butter and one teaspoon oil in a large sauce pan (3 quart size). THe remaining butter and oil will be used in another step.

  2. Add onion, garlic, celery and peppers. Cook vegetables for about 5 minutes over moderate heat, stirring occasionally.

  3. Add wine and bring mixture to a boil. Continue boiling and stirring until nearly all the liquid has evaporated.

  4. Add tomatoes, barley, and broth. Bring mixture to a boil, reduce heat, cover and cook for 25 minutes, stirring occasionally. (There should be plenty of liquid left in the pot when done.)

  5. While the barley is cooking, brown the chicken on both sides in a large skillet in the remaining two teaspoons of butter and two teaspoons of oil.

  6. Transfer barley mixture to a three or four cup casserole that has a cover. Stir in salt and pepper to taste. Add cooked chicken, imbedding them in the barley mixture.

  7. Cover and bake in a preheated 350 degree oven for 30 minutes.

  8. Sprinkle milk over the casserole and bake uncovered another 15 minutes or until chicken is very tender. If the casserole seems to be drying out, cover during the last 15 minutes of cooking.

  9. Serve the casserole garnished with parsley and scallions.
