Recipe Ingredients for Chicken Barley Bake

1 pound chicken breasts, cubed
1 1/2 tablespoons light olive oil
1/4 small onion, diced
1 yellow pepper, diced
6 medium mushrooms, diced
8 small red potatoes, chopped
2 medium carrots, chopped
1 medium zucchini, chopped
3/4 cup frozen corn
1 1/2 cups 98% fat free cream of chicken soup
1 1/2 cups 98% fat free cream of mushroom soup
1/2 cup fat free yogurt
3 tablespoons Parmesan cheese, grated
1 cups pearled barley
3 1/2 cups water
2 teaspoons black pepper
1/2 cup shredded cheddar cheese

Recipe Directions for Chicken Barley Bake

  1. Bring 3.5 cups water to a boil and add the barley. Cook until barley is tender.

  2. Meanwhile, heat the olive oil in a large skillet over medium high heat. Add the chicken breast cubes and brown on all sides.

  3. Remove chicken from skillet and add sliced onion, bell pepper, and mushrooms. Sautee until vegetables are tender.

  4. In a small bowl, combine soups, yogurt and parmesan cheese.

  5. In a large baking dish, mix together the chicken, all the vegetables, and the barley. Pour chicken soup sauce over the mixture and toss to coat. Top with shredded cheddar cheese. Cover with aluminum foil

  6. Bake at 350 until vegetables are tender, about 30 minutes. Remove aluminum foil and bake until cheese is melted and bubbly, about 10 minutes longer.
