Recipe Ingredients for Chicken Balsamic with Yukon Gold Potatoes

6 medium Yukon gold potatoes, quartered
8 strips bacon, low salt cut into 1/2 inch pieces
1 1/2 pound chicken breasts
1 Salt and pepper
2 T rosemary, chopped
8 garlic cloves, quartered
1 cup balsamic vinegar
1/2 cup chicken broth

Recipe Directions for Chicken Balsamic with Yukon Gold Potatoes

  1. Put the potatoes into the slow cooker. Cook the bacon in a large skillet over medium heat until crisp. Remove to paper towel to drain, leave the drippings.

  2. Sprinkle the chicken evenly with the 1 ˝ teaspoon salt the ˝ t. pepper and add to bacon drippings.

  3. Brown the chicken on all sides, 12 to 15 minutes. Add the rosemary and garlic and sauté for 1 to 2 minutes. Deglaze the skillet with the vinegar, scraping any brown bits from the bottom, and transfer the contents to the slow-cooker.

  4. Add the broth, Cover and cook for 6 hours on low.

  5. Sprinkle the reserved bacon over the top of the chicken and potatoes before serving.
