Recipe Ingredients for Chicken with Balsamic Bell Peppers

3/4 tsp salt, divided
1/2 tsp black pepper, divided
1/4 tsp garlic powder
1/4 tsp dried oregano
18 oz chicken breasts, skinless, boneless (3 6 oz breasts)
1 tbsp olive oil
2 cups red bell pepper, thinly sliced
1 cup yellow bell pepper, thinly sliced
1/2 cup thinly sliced shallots (about 1 large)
1 1/2 tsp rosemary, chopped, fresh
1 cup chicken broth
1 tbsp balsamic vinegar

Recipe Directions for Chicken with Balsamic Bell Peppers

  1. Heat a large skillet over medium heat. Combine 1/2 tsp salt, 1/4 tsp black pepper, garlic powder, and oregano.

  2. Brush chicken with olive oil; sprinkle spice rub over chicken. Spray skillet. Add chicken; cook until browned on both sides, and cooked through.

  3. In another skillet, over medium-high heat, spray and add bell peppers, shallots, and rosemary; sauté 3 minutes. Stir in broth, scraping pan to loosen browned bits. Reduce heat; simmer 5 minutes.

  4. Increase heat to medium-high. Stir in vinegar, 1/4 tsp salt, and 1/4 tsp pepper; cook 3 minutes, stirring frequently. Serve bell pepper mixture over chicken.
