chicken breasts cooked with carrots, spinach and shrooms

Recipe Ingredients for chicken baked with veggies

8 oz chicken breast
3 small carrots
1/2 cup white onion
1 clove garlic
1/4 cup balsamic vinaigrette
2 cups spinach
6 large mushrooms

Recipe Directions for chicken baked with veggies

  1. spray pan with non-stick spray

  2. chop spinach and add to pan

  3. chop onions and halve. Put half on top of spinach. Add 3/4 of the sliced garlic clove on top of spin and onion. Pepper and salt to taste.

  4. Place chicken breasts on top of spinach mixture. Carefully cover all the spinach.

  5. Place coarsely chopped carrots and remaining onion around chicken.

  6. Add balsamic vinaigrette (use low fat or low carb to save cals) on top of carrots.

  7. Season chicken breasts with remaining sliced garlic and pepper.

  8. You may want to add some water to the bottom of pan but be careful not to add too much! Maybe 1/4 cup or less is enough!

  9. Bake at 350 until chicken is cooked through and juices run clear.
