A quick way to use leftover chicken with a creamy sauce.

Recipe Ingredients for Chicken and Bacon Spaghetti

9 oz spaghetti
10 cups boiling water
1 1/4 tsp salt
8 bacon, diced
1 cup green onion, chopped
1 tbsp all-purpose flour
6 oz skim evaporated milk
1 1/4 cup 1% milk
1/4 tsp pepper
2 1/2 cups chicken, cooked and chopped
3/4 cup parmesan cheese

Recipe Directions for Chicken and Bacon Spaghetti

  1. Cook spaghetti in boiling water and salt in large uncovered pot for 8 to 10 minutes, stirring occasionally, until tender but firm. Drain. Return to same pot. Cover to keep warm.

  2. Meanwhile, cook back in large saucepan on medium-high to about 5 minutes until almost crisp. Add onion. Cook for about 1 minute, stirring occasionally, until onion turns bright green.

  3. Add flour. Heat and stir for 1 minute. Slowly add evaporated milk, stirring constantly until smooth. Add milk, nutmeg and pepper. Heat and stir for about 3 minutes until boiling and thickened.

  4. Add chicken and peas. Stir. Reduce heat to medium-low. Simmer for about 5 minutes, stirring occasionally, until heated through. Add to spaghetti.

  5. Add cheese. Toss well. Remove to large serving dish. Garnish with additional pepper not included in the recipe.
