You can use any color bell pepper to your desired taste and color. I like the green and use it when I'm having a green dinner like St. Patricks. The recipe sounds like an odd combination but don't be fooled, it really is good. If green isn't appealing to you be sure to make a side to balance the color.

Recipe Ingredients for Chicken & Avocado w/ Sweet Pepper Sauce

10 oz 100% All Natural Chicken Breasts
0.33 cup Soup, chicken broth, canned, less/reduced sodium
0.5 tsp Garlic Powder
0.25 tsp Pepper, Black
0.5 medium raw Bell Pepper Green
0.25 cup, cubes Avocados
4 serving Apricot Low Sugar Preserves

Recipe Directions for Chicken & Avocado w/ Sweet Pepper Sauce

  1. In 10-inch nonstick skillet, heat chicken breasts, broth, garlic powder, pepper and bell pepper over medium - high heat to boiling; reduce heat. Cover and simmer about 10 minutes or until juice of chicken is clear when center of thickest part is cut (170F). Remove chicken; keep warm.

  2. After removing chicken put the pepper mix from skillet into a blender; add spreadable fruit. Cover and blend until bell pepper pieces are pureed. Slice chicken breasts crosswise. Arrange chicken and avocado slices on plates; top with sweet pepper sauce.
