Recipe Ingredients for Chicken Avocado Soup - ONLY 6 Weight Watchers Points!

2 1/2 cups chicken broth
1/2 chicken breast
1/2 tomato, diced
1 clove garlic, minced
3/4 cup scallions, chopped fine
1 avocado, diced
1/4 cup cilantro, diced
1 tsp olive oil
1/8 black pepper
1/8 tsp cumin
1/8 tsp chilli powder

Recipe Directions for Chicken Avocado Soup - ONLY 6 Weight Watchers Points!

  1. In a large pot, heat oil over medium heat. Add 1 cup of scallions and garlic. Sauté about 2 minutes then add tomatoes and sauté another minute, until soft. Add chicken stock, cumin and chile powder and bring to a boil. Simmer, covered on low for about 15-20 minutes.

  2. In 2 bowls, fill each with 1/2 cup chicken, 1/2 avocado, remainder of the scallions, and cilantro. Ladle 1 cup chicken broth over the chicken and serve with a lime wedge.
