Chicken and Avocado Casserole Family Favourite

Recipe Ingredients for Chicken and Avocado Casserole

500 g chicken
40 g flour
1 tbsp thyme
50 ml lemon juice
1 tbsp lemon peel
50 g butter
2 onions
250 ml white wine
125 ml chicken stock
125 ml sour cream
2 avocados

Recipe Directions for Chicken and Avocado Casserole

  1. Preheat oven to 180C.

  2. Cut chicken into pieces and coat with flour, thyme, lemon rind and season with salt and pepper, then fry the chicken pieces in the butter until golden brown. Remove chicken from pan and place in a casserole dish.

  3. Chop the onions and fry in remaining fat for about 5 minutes, sprinkle over any remaining flour and cook for 1 minute, then add wine and stock, bring to a boil and pour over chicken.

  4. Bake in oven for 1 hour, remove casserole and allow to cool slightly.

  5. Slice avocado and toss in lemon juice, stir in avocado and sour cream and return to oven for 10 minutes
