Recipe Ingredients for Chicken & Avocado Casserole Adapted

28 oz chicken
1 cup whole wheat flour
2 tbsp thyme
50 ml lemon juice
2 tbsp lemon peel
3 tbsp butter
1/4 onion
1 cup white wine
1/2 cup chicken stock
1/2 cup light sour cream
3 avocados

Recipe Directions for Chicken & Avocado Casserole Adapted

  1. Preheat oven to 300C.

  2. Cut chicken into pieces and coat with flour, thyme, lemon rind and season with salt and pepper, then fry the chicken pieces in 6 Tbsp I can't believe its not butter light until golden brown. Remove chicken from pan and place in a casserole dish.

  3. Chop the onions and fry in 1 Tbsp I can't believe its not butter light until soft, sprinkle over any remaining flour and coat onions, then add wine and stock, bring to a boil, allow to thicken, and pour over chicken.

  4. Bake in oven for 30 minutes, remove casserole and allow to cool slightly.

  5. Slice avocado and toss in lemon juice, stir in avocado and sour cream. Reduce oven temp to 180C and return casserole to cook for additional 10 minutes
