A lunch I've started to make for my husband now that we're trying to slowly control his portions and lower his sodium intake.

Recipe Ingredients for Chicken + Avocado Burrito

3 oz chicken
1/4 cup diced tomatoes
3 tbs diced onion
1/4 cup avocado
1 oz brown rice
1 flour tortilla
1/4 tsp salt
1 tbsp salsa or sour cream (optional)

Recipe Directions for Chicken + Avocado Burrito

  1. Grill chicken until juices run clear.

  2. Dice onions and tomatoes together.

  3. Saute onion/tomatoes until onions are browned and translucent.

  4. Prepare rice as directed on package.

  5. Smash avocado on tortilla until flat.

  6. Sprinkle w/salt

  7. Assemble burrito by placing rice on top of flattened avocado then spreading tomato/onion mixture on top of rice. Place chicken pieces on top of tomato/onion mixture. Then finishing with salsa and/or sour cream (optional). Fold and wrap together tightly.
