Recipe Ingredients for Chicken Avgolemono Soup

4 tbsp butter
3/4 cup chopped onion
1 carrot, chopped
1 stalk celery, chopped
1/2 lb skinless, boneless chicken breast
5 cups chicken stock
1 cup rice
3 eggs
1/2 cup lemon juice

Recipe Directions for Chicken Avgolemono Soup

  1. Melt butter in pot, add veggies and cook ove rlow heat until softened, approx 10 minutes.

  2. Add chicken and chicken stock, bring to boil, lower to simmer, cover and cook 30 minutes.

  3. Remove cooked chicken, finely slice it. Menwhile, bring soup to boil. Add sliced chicken back to pot along with orzo and cook 10 minutes. Season to taste.

  4. In heat proof bowl, beat eggs and lemon juice. If you like stronger lemon flavor, increase juice to 2/3rs or 3/4s cup.

  5. Ladle some of the hot soup (NOT BOILING) into the lemon mixture. Incorporate 3-4 ladles full adding only 1 ladle at a time.

  6. Add egg sauce to soup, stir constantly. Keep soup warm, but do not boil as eggs will curdle.
