1/2cup chicken broth 1lb chicken breast 1/2lb asparagus 7oz roasted red peppers, drained and chopped 1clove garlic 1/2cup chopped tomato 2tsp balsamic vinegar 1/2cup low fat mozzarella 1/2cup chopped onion

Recipe Directions for chicken with Asparagus and red peppers

  1. 1.Brown chicken large skillet w/chopped onions.

  2. 2.Once browned, add broth and cook (appx 15 mins) until chicken is almost cooked through.

  3. 3.Add asparagus, red peppers, and garlic.

  4. 4.Continue cooking 10 minutes, until chicken is done and asparagus is tender.

  5. 5.Place tomatoes in skillet during last two minutes of cooking.

  6. 6.Sprinkle with vinegar. Top with mozzarella cheese and serve
