Chicken with asparagus, red peppers, mushrooms and onion.

Recipe Ingredients for Chicken with Asparagus and Red Peppers

2 lbs. Chicken Breast
2 tbs. Olive Oil
12 oz. Asparagus
10 oz. Red Bell Peppers
8 oz. Mushrooms
2 cloves Garlic
1 large Onion
28 oz. Diced Tomatoes
2 tbs. Grated Cheese

Recipe Directions for Chicken with Asparagus and Red Peppers

  1. Olive oil and chicken in frying pan, brown chicken. Set aside.

  2. In same frying pan, saute onion, garlic, asparagus, mushrooms and red peppers for 5 mins.

  3. Add diced tomatoes and balsamic, saute 10 mins.

  4. Add chicken back to frying pan.

  5. Serve.
