Chicken & Asparagus Pasta in a fresh pesto sauce

Recipe Ingredients for Chicken & Asparagus Pasta (Pesto)

1 oz Mozzarella, Part Skim Milk Cheese
1/2 cup Milk, Lowfat, Fluid, 1% Milkfat
1/4 cup Cream, Fluid, Half And Half
8 ounces Pasta, Fresh-refrigerated, Plain, As Purchased
344 g Chicken, Breast, Meat Only
1 Peppers, Sweet, Red
1 lb Asparagus
1 tbsp Olive Oil
1/4 cup Parmesan, Grated Cheese
1/2 tsp Peppers, Sweet, Red
2 tsp Oregano, Ground
1 tsp Basil, Fresh
1 clove Garlic
2 tbsp Olive Oil
1 cup Basil, Fresh
3 tsp Parmesan, Grated Cheese
1 clove Garlic

Recipe Directions for Chicken & Asparagus Pasta (Pesto)

  1. Chicken & Asparagus Pasta:

  2. In a large skillet heat olive oil over medium heat.

  3. Add garlic and cook for one minute.

  4. Add asparagus and sautee' asparagus for 3 minutes.

  5. Add chicken, red pepper, oregano and basil.

  6. Cover and cook for 5 minutes or until chicken is grilled and vegetables are tender-crisp; stirring occasionally.

  7. Meanwhile, cook pasta as directed on package.

  8. Drain pasta. Add shrimp & vegetables.

  9. Toss with 1/4 tsp red pepper and parmesan cheese.

  10. Pesto Sauce:

  11. hull garlic and place it and the parmesan in food processor.

  12. pulse until finely chopped.

  13. seperate basil from stem and place in processor. (if it gets too full pulse a few times to lessen the volume, but don't fully chop until all the basil has been added.)

  14. process until all ingredients are finely chopped and mixed.

  15. While pulsing add olive oil (or if you don't have a machine with holes in the top, add one tbsp at a time and pulse a few times in between additions.)
