Kinda high in calories, but EXCELLENT in taste! Use PAM Cooking Spray instead of oil and leave out artichokes to cut calories some. Tastes just as good without.

Recipe Ingredients for Chicken Asparagus Marsala

8 oz chicken breast (2 "Thin & Fancy" Cut breasta)
1/4 cup breadcrumbs
1/4 cup parmesan cheese, grated
1 tbsp Italian Seasoning
2 tbsp Enova
1 tbsp Extra Virgin Olive Oil
1 cup marsala wine
1 tbsp shallots, finely diced
3 tbsp marinated artichoke heart, chopped
1 cup mushrooms, sliced
2 cloves garlic, minced
13 oz asparagus, chopped

Recipe Directions for Chicken Asparagus Marsala

  1. Bread chicken with mix of crumbs, cheese, and seasoning

  2. Add oils to pan and cook chicken until done

  3. Remove chicken from pan and wipe pan clean

  4. Return pan to med-high heat and add marsala wine

  5. Add shallots, artichoke, garlic, and mushrooms

  6. Cook until mushrooms are starting to become tender

  7. Add asparagus and stir

  8. Simmer for about a minute then return chicken

  9. Cook chicken with mixture a couple minutes per side.

  10. Remove chicken to plate and top with asparagus marsala sauce.

  11. (For thicker sauce, add cornstarch to sauce)
