Braised chicken thighs w/ Artichokes & Mushrooms

Recipe Ingredients for Chicken with Artichokes & Mushrooms

36 ounces chicken, thigh, meat only
1 pinch Salt
1 pinch freshly ground pepper
1 tablespoon All-purpose flour
2 tablespoons butter
1 1/2 tablespoons extra-virgin olive oil
1 medium onion, chopped
4 ounces cremini mushrooms, quartered
1 1/2 cups white wine
6 ounces frozen artichoke hearts, thawed and squeezed
1 1/2 cups chicken stock, preferably home made
2 tablespoons half and half

Recipe Directions for Chicken with Artichokes & Mushrooms

  1. Melt butter in oil

  2. Salt & Pepper chicken, dredge in flour

  3. Cook chicken on high facing down 12-14 minutes, turn once

  4. remove chicken & pour off all but 1 Tbl fat

  5. saute onion & mushroom over low until soft, 5 minutes

  6. add wine and boil 5 minutes until reduced in half

  7. add broth, thyme & bay leaf & artichokes

  8. replace chicken & braise in over at 350 45 minutes

  9. remove pan, put on stovetop on high & stir in 2 tbl half & half

  10. reduce 5 minutes & serve
