Chicken, Artichoke, Red Peppers, and Blue Cheese

Recipe Ingredients for Chicken with Artichoke, Red Peppers, and Blue Cheese

6 oz chicken breast
3 oz Artichoke Hearts
1/4 cup red pepper
1 t olive oil
1 t garlic
2 small potatoes
3 oz blue cheese

Recipe Directions for Chicken with Artichoke, Red Peppers, and Blue Cheese

  1. Cook garlic (and Italian seasoning) in oil to infuse, add chicken tenders or chicken breast meat, brown. Remove and drain oil.

  2. Par boil potatoes.

  3. Add artichoke hearts and a little marinade to skillet, Roasted Red Peppers, and sliced potatoes. Return chicken to skillet.

  4. Top with a little blue cheese
