Recipe Ingredients for Chicken Artichoke Casserole

1 tbsp olive oil
1 3/10 lb chicken breast, skinless, boneless, cut into small pieces
1 garlic clove, minced
1 c. sweet onion, chopped
1 c. chicken broth, low sodium
1 tbsp sage
1 tbsp dried thyme
1 tsp salt
1/2 tsp pepper
2 c fresh spinach leaves
1 3/4 c tomato, diced
230 grams artichoke hearts, drained and chopped [111518}

Recipe Directions for Chicken Artichoke Casserole

  1. heat 1/2 tbsp evoo with cut up chunks of chicken and garlic until mostly done

  2. in separate skillet heat 1/2 tbsp oil with onion

  3. after onion is browned add chicken broth and next 4 ingredients

  4. add 2 skillets together in baking dish

  5. top with spinach, tomatoes, and artichoke hearts

  6. bake at 400 for 40 minutes

  7. fluff mixture

  8. add sides
