Recipe Ingredients for Chicken and Artichoke Bake

16 ounces chicken breast
1/4 tsp pepper
1 tablespoon flour
1 tablespoon butter
1 tablespoon olive oil
8 ounces sliced mushrooms
16 ounces artichoke hearts , canned, drained
1/2 cup tomatoes, sun dried, soaked and drained
2 1/4 ounces ripe olives, sliced
1/4 cup chicken broth, low sodium
3 tablespoons lemon juice
1/4 cup chicken broth low sodium

Recipe Directions for Chicken and Artichoke Bake

  1. *To roast tomatoes, cut plum tomatoes into wedges, sprinkle with salt and pepper, place on a foil-lined baking sheet, and roast at 250° for about 3 to 4 hours.

  2. Place chicken breast halves between sheets of plastic wrap and gently pound to a uniform thickness. Sprinkle chicken with salt and pepper then dredge lightly in flour.

  3. Preheat oven to 350°.

  4. Heat butter and olive oil over medium heat; add the chicken pieces.

  5. Brown chicken, turning to brown both sides.

  6. Add mushrooms and continue sautéing for another 2 minutes.

  7. Add remaining ingredients and bring to a boil.

  8. Simmer until reduced slightly, then cover and transfer to the oven.

  9. Bake for 20 to 25 minutes, or until chicken is cooked through.
