Whether it keeps the doctor away or not, an apple every day certainly doesn't hurt. It provides plenty of fiber, some vitamin C, and is cholesterol- and sodium-free. Toss a chopped apple together with last night's chicken and a few raisins for a delicious meal. Jane Kinderlehrer.

Recipe Ingredients for Chicken-Apple Salad

1 cup cooked diced chicken or turkey
1 cup diced apples (about 2 medium)
1/3 cup chopped celery
1/4 cup raisins
1 tablespoons lemon juice
1/4 cup mayonnaise
2 c romaine lettuce or other salad greens

Recipe Directions for Chicken-Apple Salad

Combine chicken or turkey, apples, celery, and raisins in a bowl. Make a dressing with lemon juice and mayonnaise; add to other ingredients and mix well. Chill thoroughly. Serve on a bed of salad greens.
