Adapted from a Good Housekeeping Recipe to fit my taste. Can freeze the other loaves for another meal.

Recipe Ingredients for Chicken& Apple Meatloaf

1 lb. ground chicken breast
1 medium golden delicious apple
1 slice (14 g) 100% Whole Wheat Sandwich Bread
1/4 c. Fat Free Skim Milk
1/2 c. finely chopped onion
1/4 c. parsley flakes
1/2 tsp. salt
1/2 tsp. pepper
1 large egg, lightly beaten
1 tbs. vegetable oil
1/4 c. ketchup
1 tbs. dijon mustard

Recipe Directions for Chicken& Apple Meatloaf

Preheat oven to 450 degrees. In food processor, pulse bread into fine crumbs. Mix crumbs and milk in a bowl and set aside. Grate apple with box grater. If needed, grind chicken up in food processor. In a large bowl, combine chicken, apple, onion, parsley, egg, 1/2 tsp. salt, 1/2 tsp. pepper. Mix well with hands and form 4 loaves on greased baking dish. Roast 10 minutes. Stir ketchup and mustard together. After roasting, brush onto meatloaves and return to the oven for another 10 minutes or until the center of loaves reach 165 degrees F.
