Food network chicken/sausage gumbo... modified for less fat

Recipe Ingredients for Chicken and Andouille Gumbo

2 tbsp Olive Oil
12 oz Turkey Andouille Sausage
3/4 cup White Whole Wheat Flour
12 oz Chicken
2 medium (2-1/2" dia) Onions
2 medium raw Bell Pepper Green
2 stalk, medium (7-1/2" - 8" long) Celery
10 oz Okra
10 clove Garlic
2 leaves Spices Whole Bay Leaves
1 tsp, leaves Thyme, Dried
1 tsp Spices Crushed Red Peppers
8 cup Broth Chicken Reduced Sodium
3 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
2 tbsp Vinegar, Cider

Recipe Directions for Chicken and Andouille Gumbo

  1. Heat a large dutch oven over medium-high heat and add the olive oil. Add sausage and cook, stirring occasionally, until browned and much of the fat is rendered. Remove sausage to plate with slotted spoon.

  2. While sausage browns, pour generous amoutn of flour into shallow baking dish and season with salt/pepper. Dredge the chicken in the flour and brown in dutch oven, in batches if necessary (originally recipe calls for andouille sausage and 12 chicken thighs). Transfer chicken to plat with sausage.

  3. Add 1/2 c flour to dutch oven and cook stirring constantly, until light golden brown, about 8-10 minutes. Add onions, bell peppers, and celery and cook, stirring, about 2 minutes. Stir in okra and garlic and cook, stirring, about 2 minutes more.

  4. Strip leaves from fresh thyme, or add the dried and stil in bay leaves, red pepper flakes, and 6 cups broth. Crush tomatoes through your hands (originally recipe calls for 1 can peeled whole tomatoes, I chose fresh to avoid sodium) into the pot. Return chicken and sausage and bring pot to a boil. Reduce heat and simmer, uncovered 25-30 min or until everything is thoroughly cooked. Stir in additional chicken stock to thin sauce a bit, if desired. Stir in vinegar, scallions and parsley. Taste to adjust any seasonings.
