Based on an Emeril Lagasse recipe. A good way to use up leftover dinner rolls.

Recipe Ingredients for Chicken Andouille Casserole

1 1/5 lb boneless skinless chicken breast, cut into 1" pieces
190 3 links andouille sausage
1 tsp black pepper
1/4 tsp cardamom
1/2 tsp garlic powder
1 tsp rosemary
1 tbsp butter
110 g onion (1 medium), cut into 1/2" pieces
1 oz artichoke hearts in oil, cut into pieces
6 oz baby bella mushrooms, cut in half
1 cup frozen peas
12 oz 1% buttermilk
140 4 rolls crusty dinner rolls
2 tbsp grated Parmesan cheese
1/2 tbsp olive oil
1 tsp paprika

Recipe Directions for Chicken Andouille Casserole

  1. Heat a frying pan to high heat.

  2. Add chicken, and cover with seasonings.

  3. Turn chicken, then add sausage. Cook until just browned, then remove from pan.

  4. Reduce heat to medium-high and add in butter and onions, then mushrooms. Stir.

  5. Pour in peas and artichokes and stir.

  6. Cover with 1 cup of buttermilk, simmer until reduced.

  7. While vegetables are simmering, cut bread into 3/4" pieces. Coat bread in 1/2 cup buttermilk, 1/2 the Parmesan cheese, and 1/2 tbsp olive oil.

  8. Pour chicken and sausage into sprayed 9x9" baking dish.

  9. Cover with mushroom mix and combine.

  10. Cover chicken mixture with bread and spread evenly.

  11. Sprinkle remaining Parmesan and paprika over bread.

  12. Bake for 30 minutes at 400 degrees F.

  13. Cool slightly, cut, and serve.
