A lovely medley of fruits and nuts makes this salad a hard-working antioxidant-rich medley of delightful flavors and textures. From Jane Kinderlehrer.

Recipe Ingredients for Chicken amd Fruit Salad

2 cups cooked chicken, cut in bite-size pieces
1 cup diced celery
20 ounce pineapple chunks, drained, juice reserved
2 oranges, peeled and sectioned
1/2 cup chopped pecans, lightly roasted
1 cup seedless grapes, whole
4 tablespoons fat-free mayonnaise
1 Romaine lettuce leaves

Recipe Directions for Chicken amd Fruit Salad

  1. Combine chicken, celery, pineapple chunks, oranges, pecans, grapes, and dressing in a pretty serving bowl. Combine the mayonnaise with 4 tablespoons of the reserved pineapple juice.

  2. Serve on Romaine lettuce leaves.
