A typical Peruvian dish normally served with french fries and rice, but I cut those out to make it healthier!

Recipe Ingredients for Chicken (almost) Lomo Saltado

1/2 chicken breast, meat only, cut into chunks
1 cup cilantro, chopped
1 cup tomato, diced
1 cup onion, chopped
1/2 cup green onion
1 tablespoon garlic
1 salt to taste
1 pepper to taste

Recipe Directions for Chicken (almost) Lomo Saltado

  1. Saute chicken.

  2. Then saute the onions, garlic and tomatoes until soft.

  3. Add seasonings, ie salt and pepper

  4. Just before it's done add the green onions and cilantro.
