Chicken almond stir fry, Low Fat Recipe

Recipe Ingredients for Chicken Almond Stir-Fry

1 c Chopped celery
1 c Chopped onion
1 lb chicken breasts, Boneless, skinless, cut in 1/2" cubes
5 oz. peas, frozen, thawed
8 oz. water chestnuts, sliced, drained
1/2 bell pepper, seeded and cut in 1/2" pieces
1 c water
2 teaspoons Chicken bouillon granules
3 tablespoons soy sauce, low sodium
1 teaspoons Sesame oil
2 tablespoons cornstarch, dissolved in 1/2 cup cold water
1/4 c almonds, slivered, toasted

Recipe Directions for Chicken Almond Stir-Fry

  1. In a large heavy skillet sprayed with Pam, stir fry celery and onion over

  2. medium heat until crisp-tender. Remove from skillet. Re-spray, and brown

  3. chicken over high heat, stirring constantly. Return celery and onions to

  4. skillet. Add peas, water chestnuts, red pepper, water, bouillon, soy sauce

  5. and sesame oil. Simmer 3 minutes. Stir in cornstarch mix and cook until

  6. thickened. Garnish with almonds. Serve over rice.
